In my pork-obsessed eyes, there are not many things better than free-range pigs. Foraging on acorns, various ground dwellers and a host of other pig treats lends itself to happier animals and an amazing quality of meat that can be further transformed using various methods and La Quercia is a company that really gets the idea here. They are pretty young in terms of time that the company has been established, but improve with each passing year and have quite an experienced and accomplished staff.
The more I read about this company and its products, the more I consider jumping in my car and driving to Iowa to see the operation in action. What a dream that would be! Outside of going to España to witness a farm with Pata Negra pigs growing nicely, a trip to see La Quercia would rank right up there for me. There are many stories I have read regarding La Quercia and the artisanal salumi they create using traditional dry curing and I have yet to sample this, but I will….Soon….Yes, very soon.
I really like stories of small companies doing major things and having an impact on industry.
